Since taking over the family vineyards, Aurelien has converted them to organic farming and begun incorporating biodynamic practices. His first vintage making wine under his own label was 2019.

The base wines are always fermented with native yeasts. Je prefers to work with old barrels over stainless stell but has been experimenting with Georgian-style qvevris.
