Dostert’s Elblings are sharp, with the contrast unapologetically turned way up. This is a raw, essential wine: lemon water, salt, dissolved sweet tarts, lemon zest, pulverized chalk. The élevage here is evident, beautifully done, the neutral wood tones framing the punch of the citrus well, adding not exactly finesse, but some roundness – providing a few polished edges to a very incisive wine. This is a thrilling, if particular, wine. Fans of Vetter or de Moor will love this; people who do not like acidity will not like this.
This cuvee is sourced exclusively from young vines, mostly planted in 2014 in and around Nittel, on solid Kimmeridgean limestone. As with most of Dostert’s wines, it was whole-cluster pressed and fermented in neutral barrels. It was bottled unfined and unfiltered with minimal sulfur.
