ABOUT: Sylvain Liotard started the estate in 2017 after a career as a carpenter for seventeen years, followed by time in cooperage, which ultimately led him to winemaking. He now manages 5.5 hectares spread across more than 17 small parcels in the Savoie crus of Apremont and Abymes. The estate follows biodynamic principles, working in harmony with the moon phases. Like much of Savoie, the parcels are dominated by limestone and marl soils. This wine is a wonderful example of the exciting new wave of small producers in the region who are dedicated to organic farming but still use some SO2 at bottling for stability and in this example, utilizes temperature control in the cellar.
