Certified organic Pinot Noir from Vallée du Cher from legendary producer Hervé Villemade. 80% of the juice is fermented whole cluster, and the other 20% was destemmed, for a balance of vibrant fruit and structure.
- Hervé Villemade took over his father’s plot of vines in 1995, and everything was vinified conventionally at the time.
- He was uninspired by conventional winemaking, and developed a serious sulfur allergy in 1997. During the year 2000 he decided to convert his property over to organic viticulture.
