Pascal and Moses at Les Capriades singlehandedly convinced me of the greatness of pet nat. They make (IMHO) the apotheosis of méthode ancestrale sparkling wines. And this bottle represents their last vintage.

Pet Sec has always been their standard-bearer. 2022's version is a bit unique in that it's 100% Chardonnay. The wine is intensely mineral and full of energy (driven by its near-perfect mousse, which is Capriades' trademark). It jolts from citrus to wet rocks. I'm going to put away as much as I can, for as long as I can.
